Breakfast Sandwich – KETO Style
Bring an English muffin breakfast sandwich back into your life without the guilt.
90 seconds is all it takes to make this muffin bread and it’s as good as it looks. There are only 5 ingredients including the seasoning, most of which you probably have on hand. I use Almond Meal, it has a course grind and adds the whole grain texture you see above. But you can also use Blanched Almond Flour, which will make it more like a white bread.
For the seasonings I use Everything Seasoning from Trader Joes which adds extra flavor, but you can simply use Salt and Pepper or any seasonings you like.
The fillings are endless, this one with a fried egg, Canadian bacon, and a slice of Swiss cheese. No sauce or condiment needed (well you could add hot sauce…hmmm, yes, that will happen next time).
A few other breakfast ideas:
- Spinach artichoke spread, fried egg, and provolone cheese
- Slice of Deli meat and a piece of cheese
- Quick micro scrambled egg with salsa
- Sausage, cheddar and egg
- Leftover salmon and swipe of cream cheese
- Butter and jam or Almond butter , peanut butter
- Bacon with a sunny-side-up egg
- Avocado with diced tomatoes
You can also toast these once you cut in half, I lightly toasted mine in the same pan as my eggs.
And they aren’t only for breakfast, think of a grilled cheese sandwich with these! Yum!
Or tender roast beef, red onions, and horseradish sauce piled high and topped with a tomato and lettuce.
Hello Sandwich Heaven…….
- 1 Tbsp soft butter
- 1 egg
- 3 Tbsp Almond Meal or Flour
- ½ tsp baking powder
- 2 dashes of Everything Seasoning or Salt and Pepper
- 1 egg
- 2 slices Canadian Bacon
- 1 slice swiss cheese
- Mix all 5 ingredients together in a small glass bowl the size of a large English muffin.
- Microwave for 90 seconds
- Invert onto cutting board and slice in half like an English Muffin
- Prepare and egg of choice, here it's fried, and add the Canadian bacon to the pan to brown a little.
- At this point you can add the sliced muffin to the pan so it's lightly toasted - totally an option.
- When egg is done, place one piece of the Canadian bacon on muffin, then egg, then second piece of Canadian bacon, top with Swiss cheese and top with other half of muffin.
- So good, so easy.
