Ingredients
English Muffin - Keto Style:
  • 1 Tbsp soft butter
  • 1 egg
  • 3 Tbsp Almond Meal or Flour
  • ½ tsp baking powder
  • 2 dashes of Everything Seasoning or Salt and Pepper
Sandwich Fillings:
  • 1 egg
  • 2 slices Canadian Bacon
  • 1 slice swiss cheese
Instructions
For the English Muffin Bread
  1. Mix all 5 ingredients together in a small glass bowl the size of a large English muffin.
  2. Microwave for 90 seconds
  3. Invert onto cutting board and slice in half like an English Muffin
Sandwich
  1. Prepare and egg of choice, here it's fried, and add the Canadian bacon to the pan to brown a little.
  2. At this point you can add the sliced muffin to the pan so it's lightly toasted - totally an option.
  3. When egg is done, place one piece of the Canadian bacon on muffin, then egg, then second piece of Canadian bacon, top with Swiss cheese and top with other half of muffin.
  4. So good, so easy.
