Tuna Spring Salad
Sometimes less is more, both ingredients and effort in this bright flavorful salad, and it’s a winner. Seven ingredients including the dressing.
Every flavor and texture is more pronounced when we keep it simple.
And visually I wanted to pin this salad on the wall. It was like a colorful portrait of contrasting colors, too pretty to eat. My design brain got in the way of diving in, seriously, so pics first then devour.
This happens often….and not just with food. Like when I’m sitting in a room with someone having a great conversation and all I can focus on is the vase across the room that needs to be moved five inches to the left. I can’t concentrate until I get up and move it. Weird I know.
I had no plans of posting this simple salad, but the vibrant greens and plump cranberry jewels beckoned a place on my site.
So crunching my way through this tangy, sweet, crisp and light salad I’m bringing it to you.
Enjoy……..the simplicity.
- Spring Greens - prewashed
- Thin sliced red onion
- Plump dried cranberries
- Solid white Albacore Tuna in water, drained
- Pepitas or sunflower seeds
- Dash of dill weed
- Fresh ground black pepper
- Lemon(s) for the dressing
- Combine all ingredients together and toss well.
- The lemon is the dressing so add as much as you like.
- A few shaves of fresh Parmesan are a great addition too.
